In the beginning ...

In 1993 our founder was busy baking bagels and making fresh tasty sandwiches for his customers back in the first Dooley's Bagels and Deli on Long Island, New York.

With the success of that store, he thought about sharing his fresh baked bagels and sandwiches with other communities outside of New York.

But where could he find a city where he could open a new Dooley's and experience the same type of customer passion for his special bagels and sandwiches?! He looked high and low for many months. Alexandria, Virginia; Baltimore, Maryland; Charlotte, North Carolina; Norfolk, Virginia. Finally he chose Louisville, Kentucky - Dooley's new home.

When he visited local bagel stores, he found bagels that were too hard and too dry for his liking. He thought, "Maybe the water's wrong." So with that concern, he shipped gallons of water back to Long Island to be mixed into his dough recipe.
The problem, obviously, wasn't the local water! The difference was the other ingredients and preparation of the recipe!

In April of 1994 he loaded up a rental truck and moved to Louisville, Kentucky, home of the Kentucky Derby and now the Dooley's Bagels and Deli company.

On July 22, (Dooley's lucky number) Dooley's opened its doors in Louisville, at our St. Matthew's location. Since 1994, we have served our fresh baked bagels and tasty sandwiches in three states, with more growth in our minds. So, for fresh baked bagels, deli sandwiches, soups, homemade salads and fresh baked treats, DO DOOLEY'S!
